To my good friend Em, mother of Z, and dweller of Baltimore: Thank you for my wonderful cupcake tea towel. It is, in a word, perfection... like you!Also, I have a recipe for coconut cream cheese frosting if anyone is interested (below). I still prefer my coconut frosting (sans cream cheese and with a heckuva lot more powdered sugar), but this is a nice twist on an old favorite:
8 ounces cold cream cheese
8 tablespoons butter (1 stick)
1/8 teasp. of salt
4 3/4 cups sifted powdered sugar
1/2 teasp. vanilla extract
1/2 teasp. coconut extract
1/2 cup sweetened coconut shavings
4 3/4 cups sifted powdered sugar
